We recommend that our chocolates are eaten within three to four months of purchase, but this is only a ‘best before’ guideline as they can last longer if stored somewhere cool and dry and out of direct sunlight. The ideal temperature to keep chocolate is around 15 degrees. As a guideline the ganache’s should be eaten within four weeks and the Honeycomb within 5 days, all products should be kept wrapped and sealed in a cool environment for best results. Exposure to higher temperatures (being moved from cool to warm areas) can cause condensation causing the chocolate to ‘bloom’. This is where the cocoa butter in the chocolate rises to the surface, resulting in a cloudy grey colour. This is harmless and is still safe to eat, although the texture can change slightly.
